Healthy Dip with Butternut Squash and Gouda Cheese
Though I love a good dip, I also want my body to feel excellent and energized after I eat it.
This recipe began as a sauce to top my toddlers’ lunchtime pasta. The leftovers marinated in the fridge for a few days, and then–under some kind of inspiration–I dunked a corn chip in it.
Oof! Scrumptious!
And the after-effects were just as pleasing. No food coma. No crash.

Ingredients for Fall Gouda Cheese Dip with Butternut Squash
3 cups shredded gouda cheese
1/4 cup shredded real parmesan cheese
3/4 cup mashed butternut squash puree
1 cup organic heavy cream
3 Tbsp. grass-fed salted butter
1/4 tsp. garlic powder
1/4 tsp. ground black pepper (plus more, to taste)
Sea salt, to taste (some brands of gouda cheese are saltier than others)
Fall Butternut Squash Gouda Cheese Dip Instructions
- In a medium-sized saucepan, melt the butter with the butternut squash puree, stirring often.
- Stir in the milk or heavy cream.
- Add the garlic powder, black pepper, and shredded gouda cheese, stirring constantly with a whisk.
- When the cheese is completely melted, season the dip with salt, to taste.
- Remove from the heat and allow to cool.
- Refrigerate for 30 minutes or more, until about cool room temperature.
- Serve cool or warm, according to preference. Stir well before serving.
Storing
Store any leftovers in an airtight glass container in the refrigerator for up to five days. Before serving, warm slightly over the stove or in the microwave.
Variations to This Recipe
Try this dip on veggies and/or chips. It’s perfect, in my opinion.
But if you want to tweak it (even a little), here are a few ideas:
- The consistency of this cheese dip is quite thin. If you wish to thicken it, add in some protein powder, cream cheese, cottage cheese, or an egg (while cooking the dip).
- To add more protein, try these additions: 1/2 cup cottage cheese, 1/4 cup cream cheese, 1 egg, or 2 Tbsp. protein powder.
- This dip also doubles as an amazing pasta sauce! Try it over spaghetti or in lasagna.
