In this recipe for spiced chai tea homemade gelatin gummies, we choose this healthy drink as the base for homemade gelatin gummies and–at the same time–get to indulge in delicious flavor and creaminess.
Homemade Gelatin Gummies with Coconut Milk
Coconut milk is ultra-creamy and a great addition to traditional chai tea. Adding it to a chai tea gelatin gummies recipe just seems natural.
When I traveled to India as a fourteen-year-old girl, I got to watch my hostess prepare a kettle of chai tea and learned that chai tea is traditionally a mixture of milk and water. Both are essential to the brewing process.
Thus, when I decided to invent this recipe, using both milk and hot water seemed imperative.
Coconut milk, with its slightly sweet undertones and added coconut flavor, was the natural choice.
Homemade Gelatin Gummies with Honey (No Sugar)
As always with our recipes, we rely on natural sweeteners rather than refined sugars to bring that touch of sweetness.
Honey is the sweetener of choice for this recipe. However, feel free to experiment with other natural sweeteners.
Here are some other sweeteners that would work well in this recipe:
- maple syrup
- monk fruit
- allulose

How to Use Spices in a Homemade Gelatin Gummies Recipe
Gummies have a reputation for being fruit-flavored. And that’s delicious and all.
But when you change the base of gelatin gummies from fruit and vegetables to a creamy ingredient (such as milk), the options for adding spices can be wonderful.
In this recipe, we add the spices to the cooling gelatin mixture, after the gelatin has dissolved in the hot coconut milk.
Some spices lend themselves to homemade gelatin gummy recipes better than others do. Here are some of our favorite recommendations:
- ground cinnamon
- ground nutmeg
- ground ginger
- ground turmeric (a tiny bit)
- ground black pepper (just a dash)
- ground cardamom
- ground star anise
Some spices with which we do not recommend experimenting are garlic powder, onion powder, oregano, and Italian seasonings.

How to Use Coconut Milk in Homemade Gelatin Gummies
Adding coconut milk to a gelatin gummies recipe can sound a bit complicated. Thankfully, however, it is quite simple.
Instead of using the full amount of liquid (whatever kind it is–water, coconut water, milk, etc.), use an equal amount of coconut milk in the recipe.
For this recipe, we use the coconut milk as one of the warm liquids. However, you can also choose to use cold coconut milk to help set the gelatin after it has dissolved in hot water or another boiling liquid.
Tools Needed for This Recipe
You only really need three tools to be fully equipped to make this recipe:
- a medium-sized saucepan
- gelatin gummy molds/forms
- a wire whisk for mixing. You can also use a spoon, but a whisk makes mixing the gelatin powder a bit easier.

Ingredients for Chai Tea Homemade Gelatin Gummies
- 1 can full-fat coconut milk
- 1/4 cup honey
- 1 Tbsp. ground cinnamon
- 1 1/2 tsp. ground ginger
- Dash of ground black pepper
- 1/2 tsp. pure vanilla extract
- 5 Tbsp. grass-fed gelatin powder
- 2 chai tea bags (see note for substitutions)
- 1/2 cup hot water
How to Make Chai Tea Homemade Gelatin Gummies
- Steep the chai tea bags in the hot water for at least 10 minutes.
- In a medium-sized saucepan, heat the coconut milk, gelatin powder, and honey over low heat until the honey and gelatin powder dissolve completely.
- Add the cinnamon, ground ginger, vanilla extract, and ground black pepper and mix well. Remove chai tea bags from the tea. Stir the tea into the gelatin mixture.
- Immediately pour the gelatin into gelatin forms. Place in the freezer or refrigerator until set.
- Remove the gelatin from the forms and store in an airtight container in the refrigerator for up to a week.

Variations to This Recipe
- If you want to sub out the chai tea bags for another type of tea, I suggest using a black tea. I have also tried Lipton tea bags in this recipe, with great results.
- Instead of coconut milk, use a vanilla-flavored milk. While I don’t usually recommend using any other type of plant-based milk besides coconut milk, other types will work in this recipe if you’re in a pinch.
- Use freshly-grated ginger instead of ground ginger for a stronger flavor. Taste-test as you go so that you don’t get too much flavor, though.
- For more spice variety, try ground cardamom and/or ground star anise.
Storage Instructions
Keep these homemade gelatin gummies in an airtight container in the refrigerator for up to a week. Because of the coconut milk content, storage at room temperature for extended periods of time is not advised.
