Animal-Based Egg Pancake Bites

Animal-Based Egg Pancake Bites are super-healthy mini Carnivore pancakes that you can take along on-the-go for a healthy travel snack. With a hint of cinnamon and maple syrup, they are a favorite snack of kids and toddlers and contain no flour.

Excitement filled my heart when I stumbled across a YouTube tutorial for a healthy Carnivore pancake recipe. I quickly gathered the ingredients, whipped up the eggs, and heated up my cast iron skillet to make my own animal-based pancakes.

Imagine the deflation when I bit into the first pancake and found that it was nothing like I had expected.

Even my baby girl (who usually eats almost anything we set before her) refused to eat.

The nutrition of healthy pancakes only goes as far as your mouth if you can’t convince yourself to eat it.

So I quickly adapted the recipe. A few tweaks here and there and the result was something my kids and I found much more palatable.

I experimented with a savory animal-based pancake option and a slightly sweet one. The winner? Definitely the sweet egg pancakes, which is the recipe I’m sharing with you here.

Adding Flavor to Animal-Based Egg Pancakes

Carnivore pancakes, by themselves, are pretty meh. Boring.

In my opinion, a good pancake needs some flavor, and simply fluffing up eggs and adding gelatin and collagen doesn’t equal much flavor.

There are so many options for adding healthy, natural flavors to animal-based pancakes, though! Here are just a few ideas:

  • Orange zest (or lemon zest) paired with a bit of honey and a homemade berry sauce
  • Cinnamon
  • Vanilla
  • Almond extract
  • Onion powder, garlic powder, and oregano
  • Tiny bits of breakfast sausage
  • Pieces of bacon and bacon grease

What Makes These Pancakes Carnivore?

Truth be told, these egg pancakes are extremely high in protein. But are they 100% Carnivore-approved?

Almost.

You see, in my tweaking of the original Carnivore diet pancake recipe, I added several spices and–to complement them–a small amount of natural sweetener.

Strict Carnivore food protocol would say that “[a]ny foods that aren’t animal-based are off the table” (WebMD), which means that adding maple syrup isn’t fully in line with a Carnivore approach.

However, I excuse the addition because it actually makes these Animal-Based Egg Pancakes desirable to children (and adults).

Ingredients for Healthy Carnivore Pancakes

  • 3 eggs, with yolk and whites separated
  • 1 Tbsp. grass-fed gelatin powder
  • 2 1/2 Tbsp. unsweetened, grass-fed protein powder
  • 1 tsp. ground cinnamon
  • 1 tsp. pure vanilla extract
  • 2 Tbsp. maple syrup

How to Make Delicious Animal-Based Pancakes

  1. In the bowl of a stand mixer, pour only the egg whites. Add gelatin powder, ground cinnamon, and vanilla extract and whisk on HIGH until stiff peaks form.
  2. Scrape the egg whites from the stand mixer into a bowl and set aside.
  3. In the bowl of the same stand mixer, pour the egg yolks. Whisk on HIGH with the protein powder until a thick paste forms (about 2-3 minutes).
  4. Pour the maple syrup on top of the eggs. Gently fold the egg yolk mixture into the egg white mixture, distributing the maple syrup evenly. Some lumps of egg white may remain; that is fine.
  5. Heat a cast iron skillet over medium-low heat. When the pan is ready, drop the egg pancake batter onto the skillet in pancake shapes. For mini pancakes (my recommendation), use about 1 to 1 1/2 tablespoons of batter per pancake.
  6. Cook for about 2 minutes on one side, then flip the pancakes over to the other side. Cook for another 2 minutes, or until the egg pancakes are cooked through and lightly golden.
  7. Remove from the heat and serve warm.

How to Store Carnivore Pancakes

Animal-based egg pancakes keep excellently when stored in the refrigerator in an airtight glass container for up to 3 days. You can also freeze these pancakes. To reheat, place in a toaster until warm.
