The first day I made this recipe, I actually made it twice.
It was so good, and I knew my husband would want a taste. But my children and I had gobbled down the first air fryer basket of these bites.
It had taken me all of ten minutes to make these bites the first time, so I needed very little convincing to spend another two minutes of labor and six minutes of waiting to make another batch.
Super easy. Super fast. And super flavorful.

With multiple toddlers in the house and a husband who likes to play soccer, our family usually has a few spare (and overripe) bananas on hand at all times.
Using those bananas in banana bread every week gets old fast. Thus, my delight in finding a new recipe with a slightly different twist.

You only need one mashed banana to make an entire batch of these yummy treats. Yay!
Organic quick oats.
Use organic to avoid residual pesticides as much as possible (source).
Honey.
As always, honey is our family’s natural sweetener of choice. It works super well in this recipe.
If you need a substitute, however, maple syrup is a great option.
Coconut oil.
Cold-pressed virgin coconut oil is the way to go. According to Local Sparrow, this type of coconut oil is rich in antioxidants, which may not be true of those processed with heat.
Pure vanilla extract.
Vanilla is absolutely essential in this recipe. Do not skip it.
Ground cinnamon.
Cinnamon gives this recipe a bit more kick, and I highly recommend being generous in sprinkling these banana bread bites.

- 1 Tbsp. honey
- 1/2 tsp. pure vanilla extract

- 1 Tbsp. cold-pressed virgin coconut oil (for rolling)
Dipping/Sprinkling
- 1 tsp. ground cinnamon
- 1 tsp. cold-pressed virgin coconut oil
- 1 tsp. raw organic honey
How to Make Healthy Banana Bread Bites in the Air Fryer
Step One: In a food processor, blitz the organic quick oats until they form a fine flour.
Step Two: In another bowl, mix together the mashed banana, oat flour, baking powder, honey, and vanilla until fully combined.
Step Three: Pick up the banana bread batter and roll it into 10 equal-sized balls. Roll in the 1 Tbsp. of coconut oil, then place in the basket of the air fryer.
Step Four: Fry in the air fryer for 6 minutes at 350F.
Step Five: While the banana bread bites are frying, mix together the cinnamon, coconut oil, and honey for the dipping/coating. When finished, immediately roll the banana bread bites in the dipping sauce. (If you want to save these bites for later, I recommend cooling completely, storing, and then rolling them in the dipping sauce just before serving.) Sprinkle with extra cinnamon, if desired.
Step Six: Enjoy while warm.
Storage Instructions
Cool the banana bread bites completely before storage to avoid moisture build-up in the container.
On the countertop: Store these banana bread bites in an airtight container or bag at room temperature for up to three days.
In the freezer: Keep in an airtight Ziplock food storage bag in the freezer for up to three months.
