The answer is: yes…and no.
Thankfully, chocolate is a brown color. And avocado pulp also ages to a brown tint.
However, I have stored some chocolate avocado mousse in the refrigerator overnight and noticed a slightly ashen tint to it the next morning–still chocolate-brown, with just slightly gray undertones.
This new tint did not affect the flavor. And, a few bites into the pudding, I realized that it was only the topmost layer exposed to the air that had changed tint at all. The rest of the pudding retained its original hue.
Can you substitute honey for sugar in chocolate avocado mousse?
Most definitely! And I love doing so in my own recipe.
My favorite honey to add is raw organic honey. This honey retains all the original enzymes and purity of honey without all the processing (source).
To substitute honey for sugar, start with a smaller measurement of honey than that called for in the recipe. Honey is often much sweeter-tasting than sugar in recipes and starting small can prevent making the mousse too sweet.
After that initial measurement of honey, add more to taste.
Can you freeze chocolate avocado mousse?
Yes! For a custard-like mousse, simply freeze this recipe for chocolate avocado mousse with raw cacao powder in an airtight, freezer-safe glass container.
Remove from the freezer for a few minutes before consuming to allow the mousse to soften.
