Often, these type of popsicles contain several ingredients that our family tries to avoid: food dye, artificial flavoring, and refined sugar.

Not so with this recipe.

In our family, we are all about snacking…but we are also radical about doing it well.

This healthy mint chocolate chip popsicles recipe is no different.

We completely omit food dyes. (Why does mint have to “taste” green?)

We use pure mint extract.

And we make our own “ice cream” from plain Greek yogurt–with no refined sugar.

Healthy Mint Chocolate Chip Popsicles Without Avocado

Believe it or not, some recipes for healthy mint chocolate chip popsicles hide green fruits and vegetables in plain sight.

One popular such “hidden” ingredient is avocado.

And while I love avocado and think hidden fruits and vegetables can be absolutely phenomenal, this recipe for healthy mint chocolate chip popsicles has no vegetables or avocado blended in.

Instead, we focus on protein and ice-cream-like consistency.

How do we accomplish this? Let’s take a look at the ingredients we do use.

This recipe for healthy mint chocolate chip popsicles is truly healthy.

It centers (quite literally) around a spectacular source of protein: Greek yogurt.

About the Ingredients

Here is a run-down of each ingredient in this recipe for healthy mint chocolate chip popsicles…and why we like it so much.

Greek Yogurt: The base of our recipe is a high-protein yogurt. It also provides the creaminess that we all love so much about ice cream.

Raw Honey: For our natural sweetener, we use raw honey. If you don’t have honey (or don’t use it), then substitute maple syrup at a 1:1 ratio.

Protein Powder: We highly recommend our favorite brand, Mt. Capra Clean Whey Protein.

Mint Extract: To get the flavor for these mint chocolate chip popsicles, we use pure mint extract.

Dark Chocolate Chips: The chocolate shell on the outside of these healthy mint chocolate chip popsicles is made from dark chocolate. I like to use 85% dark chocolate.

Want an alternative? There is even the option of making your own coconut oil dark chocolate coating (see recipe below).

Coconut Oil: Coconut oil (or grass-fed butter) mixes with the dark chocolate chips to create a glossy chocolate shell on these healthy homemade ice cream popsicles.

What You Need to Make Healthy Chocolate Mint Popsicles

To make this recipe, you need only these tools:

Ingredients for Healthy Mint Chocolate Chip Popsicles

  • 1 cup unflavored, unsweetened Greek yogurt
  • 2 Tbsp. unflavored, unsweetened grass-fed protein powder
  • 1/4 cup honey (or maple syrup)
  • 1/4 tsp. pure mint extract

Chocolate Coating

  • 1 cup dark chocolate chips
  • 2 Tbsp. cold-pressed virgin coconut oil or grass-fed unsalted butter

How to Make Healthy Mint Chocolate Protein Popsicles

Step 1: In a mixing bowl, mix together Greek yogurt, protein powder, raw honey, and mint extract until no lumps remain and all ingredients are fully incorporated.

Step 2: Pour into a popsicle mold and freeze for at least 3 hours, or until solid.

Step 3: To make the chocolate coating, add the dark chocolate chips and coconut oil to a medium-sized saucepan and melt over low heat, stirring constantly. Remove as soon as the chocolate is completely melted so as not to burn it. Cool slightly.

Step 4: Dip the solidified yogurt popsicles into the melted dark chocolate to cover. (I like to spoon the chocolate over the yogurt and let it drip for a cool texture.)

Step 5: Place on a reusable silicone baking mat to dry. The chocolate should harden almost immediately, and you can consume the popsicles right away or return them to the freezer to eat later.

Recipe Substitutions

Personally, I love the flavor of melted dark chocolate chips as the chocolate coating for these healthy mint chocolate chip protein popsicles.

However, if you do not have dark chocolate chips, you can always use chopped dark chocolate.

Storage Instructions

Healthy mint chocolate chip yogurt popsicles should be kept only in the freezer. Any other storage will result in a puddle of melted yogurt and chocolate.

Store them in their popsicle mold or in an airtight Ziplock bag for up to three months.

If stored for long periods of time, these popsicles may need a few more minutes to defrost before being removed from the popsicle mold.

How to Make a Homemade Chocolate Candy Coating for This Healthy Mint Chocolate Chip Popsicles Recipe

Don’t have chocolate chips? You can still indulge in this healthy sweet treat…and take the nutrition up just a notch.

Use raw cacao powder, coconut oil, and honey to make your own chocolate coating!

You will need these ingredients:

  • 1/4 cup coconut oil
  • 1/4 cup raw honey
  • 1/4 cup raw cacao powder (non-alkalized)
  • 1/2 tsp. pure vanilla extract
  • 1/8 tsp. Himalayan pink salt

Instructions:

Melt coconut oil and honey together in a saucepan over low heat. When these are in liquid form, turn off the heat and add raw cacao powder, pure vanilla extract, and sea salt. Allow to cool slightly before using to coat these healthy mint chocolate chip popsicles.
