An Easy Peanut Butter Bites Snack
Peanut butter banana bites have been around since I was a child (if not before then). And I suppose that this longevity in as a snack just goes to show their popularity.
Making them can be a bit tricky and messy, but it doesn’t have to be complicated.
In this recipe, we make a high-protein nut butter filling and also whip up a scrumptious chocolate coating from scratch.
Truly From-Scratch Chocolate Coating
When I use the adjective “from-scratch,” I mean it with all my heart.
Many recipes for chocolate coating require using chocolate chips or candy coating.
Not this recipe.
We start with simple, healthy ingredients: coconut oil, 100% cacao powder, honey, pure vanilla extract, coconut milk, protein powder, and Himalayan pink salt.
How to Make Chocolate Candy Coating Without Chocolate Chips
You will need these ingredients to make a chocolate coating:
- 1/4 cup coconut oil
- 1/4 cup raw honey
- 1/4 cup dark chocolate cocoa powder (100% cacao)
- 1/2 tsp. pure vanilla extract
- 1/8 tsp. Himalayan pink salt
For a thinner consistency, add 2 Tbsp. full-fat coconut milk.
For added protein, stir in 1 Tbsp. protein powder.

A High-Protein Homemade Snack for Kids
This snack is a kid favorite. (However, you shouldn’t limit it to kid consumption; adults love it too!)
Eating frozen bananas is not always easy, though. To make this snack safer for young children’s consumption, slice each banana bite in halves or quarters (bite-sized pieces) before serving it to them.
Ingredients for Frozen Peanut Butter Banana Bites
Banana Bites
- 1/2 cup nut butter or seed butter (we prefer peanut butter)
- 2 Tbsp. protein powder (our favorite brand is Mt. Capra Unsweetened Grass-Fed Goat Whey Protein)
- 3 Tbsp. Greek yogurt
- 6 bananas (approximately), sliced into 1/2-inch-thick coins
From-Scratch Chocolate Coating
- 1/4 cup coconut oil
- 1/4 cup dark chocolate cocoa powder (100% cacao)
- 1/4 cup raw honey (we have used 1/8 cup before)
- 1/2 tsp. pure vanilla extract
- 1/8 tsp. Himalayan pink salt
- 2 Tbsp. coconut milk
- 1 Tbsp. protein powder
How to Make Frozen Peanut Butter Banana Bites
- In a small mixing bowl, stir together nut butter, protein powder, and Greek yogurt until all ingredients are fully incorporated.
- Spoon 1/2 tsp of the mixture onto a banana slice. Top with another banana slice. Repeat with the rest of the banana slices.
- Place the bananas on a parchment-paper-lined cookie sheet (or use a silicone baking mat) and put in the freezer for at least 15 minutes, while preparing the chocolate coating.
- In a medium-sized saucepan, warm the coconut oil and raw honey over low heat until both are completely melted.
- Remove from the heat. Add in the cocoa powder, vanilla extract, Himalayan pink salt, coconut milk, and protein powder. Stir until all ingredients are fully incorporated and no bubble pockets of protein powder remain. (Using a wire wisk can help in this process.)
- Let sit for 15 minutes to thicken slightly.
- Remove the bananas from the freezer. Carefully spoon-pour the chocolate coating over the top and sides of each banana bite.
- When all banana bites are coated, return them to the freezer for another 10-15 minutes, or until the chocolate coating has set completely.

How to Store Frozen Peanut Butter Banana Bites
Store these peanut butter banana bites in an airtight container in the freezer for best results. (We have stored them for about a week without issues.) Do NOT keep in the refrigerator or the bananas will quickly spoil and deteriorate the chocolate coating.

Protein Powder Recommendation: Our favorite protein powder brand to use in all our recipes is Mt. Capra Unsweetened Grass-Fed Goat Whey Protein.
Natural Sweetener: We have reduced the amount of honey used in the chocolate coating, with good results. However, not all tastebuds prefer dark chocolate. If you want to use less sweetener, start with 1/8 cup and slowlly add more, taste-testing as you go.
